The major difference with this griddle is hat there are three functional baskets under the griddle. Two of the baskets are air fryers and the third is a warming basket. Like a standard gas grill, having a lid/hood keeps heat in, which cooks food like an oven. This capability is especially helpful when cooking thicker cuts of meat like whole chicken breasts or thick-cut steaks. The performance of the 28 inch griddle should be slightly better than the 36 inch version. Like BIG DUMB STUPID FUN. I think that’s the real secret why they are flying off shelves right now.
